Oilseeds – soybeans and canola – are a significant source of vegetable oil worldwide and are used in foods such as salad and cooking oils, bakery shortening and margarine. Oilseeds serve as the platform for Monsanto’s food quality traits, such as the VISTIVE™ line of improved oils. Much of our current research on oilseed crops focuses on creating more stable, better tasting oils with zero trans fats and high omega-3 levels.
